One thing I've never been able to figure out about hip-hop is how a song's main credit is decided. What I mean is on a song where Eminem, Snoop, and Dre take one verse each and then team up on the choruses or hooks then what makes that an Eminem track featuring Snoop & Dre? Or that RikRok song where Shaggy just chimes in ever so often with an 'it wasn't me' and somehow it still ends up being called a Shaggy song?If only one Wu-Tang member appears on a Wu-Tang track then how do they know whether or not to credit it to Wu-Tang or to their respective solo projects? Who decides these things?

It's typically decided by which album it will appear on. If it won't appear on the album it belongs to whoever paid for the backing track.
